The ocean trout is farmed in Tasmania and flown to Sydney several times a week.

Once delivered, the painstaking process of filleting, pin boning, hand rubbing each fillet in a unique cure mix and smoking the fish begins. Seventy two hours later the special Smoked Trout, Smoked Trout Rillettes, Wasabi Cream and Tuscan Pickled Onions are ready for you to enjoy.
