When we first met Lisa from Brilliant Food we were blown over both by the quality of her product and by her enthusiasm for food.

Brilliant Food was established in 2005 and ever since Lisa has dedicated herself to producing a small and focussed product range.


Lisa sources the best Australian seafood and other ingredients available.
The ocean trout is farmed in Tasmania and flown to Sydney several times a week.
Once delivered, the painstaking process of filleting, pin boning, hand rubbing each fillet in a unique cure mix and smoking the fish begins. Seventy two hours later the special Smoked Trout, Smoked Trout Rillettes, Wasabi Cream and Tuscan Pickled Onions are ready for you to enjoy. Recent additions to the Brilliant Food range are Wood Smoked Salmon and Ocean Trout Gravalax
